From Purdue Extension's Rebuilding Your Local Food System Asset Map Roles:

Markets are the point of sale places where consumers are purchasing local food.  This could be a grocery store that buys from local growers, a farmers market, where the farm is selling directly to the customer or a restaurant that sources many ingredients locally.  Institutions such as school districts or business cafeterias that purchase from wholesalers can also be considered a market, when they are preparing the food or reselling food for the cunsumer.
