Small-scale food producers or processors—including farmers, fisheries, bakeries and specialty food and drink producers, among others—typically exhibit certain characteristics that distinguish them from their larger-scale equivalents. They are often organized as a family business, such as a family farm, or have a single proprietor (the manager-owner) who is assisted by a few workers and possibly a business partner. The small scope of these enterprises allows for production of specialty items, greater attention to quality and a focus on direct marketing.
